Long Tube Header Install A/C Doesn't Work

Backstory: I have a 2001 C5 Corvette Base and was racing my friend in a C63 AMG and I started to rough idle after, took my vette to the shop to get diagnosed and it had no compression on cylinder 7... shop said it was probably a bent valve and would cost $2500 to repair. Me and my friend said forget that and took on the 20 day long...lol... process of removing my heads and replacing the valves. While we were in there we replaced, the Air intake with VARARAM, h-pipe to a Borla X-pipe, new valves, new gaskets, new spark plugs and wires, Long tube Headers from TSP. I took the front 02 sensors and plugged them back in, however I couldn't find where to remove the rear 02 sensors from the car so i just kind of left them there... hanging... to come back to later my friend also removed the entire AIR/EGR system. I was wondering, since I am a college student, and a veteran I'm also not a mechanic if anyone could help me possibly diagnose this before I take it to the shop and spend a whole lot of money trying to figure out the problem. I also JUST had the Air compressor for the A/C replaced from the dealer less than 5 months ago, I can hear it still come on, but when the air is off completely the clutch seems to be making a little rattle, but when i turn the air on I can see it engage and the compressor turn on and start spinning.

I do not have any A/C gauges or anything, but I could take my car to a lift if I knew what to look for, or to possibly remove the rear 02 sensors if that is a problem.

I also have not yet gotten my car dyno tuned, I would like to eventually as it seems to be running extremely rich, but don't quite want to spend the money yet... Recommendations for a cheaper dyno tune around the College Station SE Texas area would be great (Austin, Houston, Dallas, San Antonio) with the former 2 being better options for me.

This may be a stupid question, but at first my car was throwing a code that left side A/C Actuator, I was so confused because what are the chances my Actuator would go out RIGHT after installing this stuff, however since then (it has been a little a month) it isn't throwing the code for that anymore, I also tried the Actuator trick to reset them where you remove the fuse for 60 seconds and then plug it back in and it made a calibrating type noise, would this mean they are working?

Another problem I have is that my head unit display is broken :*****: so I can't exactly tell what's going on with the A/C when i try to configure it in the car I have tried pressing all the options though to get cold air and nothing works.

After listing all these problems, where would you guys start? And do you think my rear 02 sensors being not turned off by a tuner shop and still plugged in could cause my A/C problems? I saw another post that mentioned this as well somewhere on the internet with replacing headers and removing 02 sensors as well.
Or is it possible my friend and I simply forgot to plug something in for the A/C when we removed everything.

Any recommendations will help as we aren't the best mechanics in the world, but we did manage somehow to remove all that stuff and replace it with almost everything working when we put it back together lol
